You know you have really got something good when your dog refuses to leave the kitchen. That is exactly what happened tonight. After a long wait, Luna finally got a taste of a sweet potato chip and couldn’t get enough.
First she stole the chip that I was bringing over to my boyfriend for a taste test right out of my hand. Then she did a silent protest by sitting in her attention spot and staring intently. When that didn’t work she started whining and then finally broke out into a full out “YOU ARE TORTURING ME” howl. All of this for sweet potato chips.
I have recently become obsessed with sweet potatoes. As long as they aren’t mashed, I think they are extremely delicious. The best part of course is that for many recipe you can share them with your dog!
Typically I eat a lot of not so healthy snacks during the Super Bowl (which is coming up this weekend!) because I’m really in it for the food and the commercials. Because I have those New Year’s resolutions creeping in the back of my mind, I wanted something delicious, but a bit healthier this year. I had recently purchased some store bought sweet potato chips, which were amazing, but also didn’t seem that hard to make. And they weren’t!
Ingredients
- 2 sweet potatoes
- 2 tbsp melted coconut oil
- Spices (optional)
Instructions
- Preheat oven to 250 degrees F.
- Wash sweet potatoes and peel off skin, if desired.
- Slice sweet potatoes as thinly and uniformly as possible. A mandolin slicer is ideal, but a knife or vegetable peeler works too.
- Toss slices in melted coconut oil with spices.
- Lay slices in a single layer on a baking sheet. You will need more than one.
- Bake for 2 hours or until crisp and brown. Flip chips after 1 hour and rotate for even cooking.
- Rest chips for about 10 minutes and serve
These chips do take a bit of time, but most of that time is cooking. You can also choose to peel your sweet potatoes or leave the skin on. My sweet potatoes were a bit old, so I wanted to make sure there was nothing funky going on. Next time, I will probably leave the skin on. It’s really just personal preference.
If you are planning to share with your pup, try leaving the chips plain or make sure to use pet friendly spices. I made half the batch with only coconut oil for Luna and added salt to the second half for a bit of extra flavor for us humans.
